This is Robin. I did a Blueberry Cream Cheese Cake on WTOK-TV this morning. Here is the recipe and a variation. Oh, yes, I learned that next week Jessica Dealy will be leaving to go back t school. I know we all have enjoyed her weather reports and how she works so well with Andrea Williams.
Blueberry Cream Cheese Cake
1 yellow butter cake mix
1/2 cup oil
8- oz cream cheese, softened
1 1/2 cups blueberries
Mix all ingredients except blueberries with mixer for about 3 minutes at medium speed. Fold in the blueberries and pour in a greased and floured bundt or tube pan and bake at 325 for about 1 hour. Cool.
You may want to dust the cake with powdered sugar when cool.
If you want a glaze, mix 1 1/2 cup powdered sugar, 1 tsp lemon juice, 1-2 tsp buttermilk or regular milk. I add juice from about 1/3 cup blueberries mashed and then remove the skins. Mix together and add one drop of blue food coloring if desired. Pour this over the cooled cake.
Variation on this cake is to add 1- 3 ounce package of dry instant vanilla pudding mix and an extra egg to the other recipe.
